I believe you can do it without hacks by your gaming capacity, but if it is a matter of "patience" too go to places, fight enemies, do quests and explore to find the gears and weapons to be able to when and while you lvl up the normal way, then, well, it is patience.
Still, as it is your game, and a single player game, if you enjoy the game with cheats and dont see yourself playing the game without, so be it (the longer version is more like "encouraging you" as yes it is very possible to overpower the enemies of your own lvl and even of lvls higher than yours).

Like I said . .it is all about the engravings and to keep collecting more weapons and exploring (so you can have at least 1 OP or kind of OP build for hunter, warrior, assassin or even full melee and being OP either in damage, resistance to damage and health or "in part" for both, without looking for any guide) as there is no need to upgrade gear and weapons, unless it is something literally so OP that it is worth because there is nothing better at the game (making it worthless to spend drachmae on anything else).
I think (and it is just my opinion, I am not making a joke or making fun or anything else) from what you said here:

I believe is more a matter of you not believing yourself (lack of confidence) and just taking the "other way" to get OP (that is using cheat) or just want to have everything "now" instead of going the normal way for it (what is a matter of patience and, well, is also another reason to use a cheat in a single player game, if you dont want to "spend time" looking for things or just exploring and killing enemies to see what you can get . . or maybe even spending time to lvl up, as I believe there may be a cheat to lvl up from 1 to 99 instantaneously and unlock all possible abilities and the use of all gears and weapons).
I mentioned the possibility of "you not believing yourself" as you said "I would never be able to do without them", I believe "yes you can" because when I was lvl 11~14 I was already finding the game quite easy when fighting against enemies of my own lvl at Nightmare and started roaming around to areas where all enemies were much higher lvl than me (and I gone straight up to Lesbos, lol . . . a lvl 11~14 at Lesbos
Also, I am not the only example of that MUCH LESS the best example.
Not only my build I know and believe to be far from the best builds out there (even because I did not loook at any guide, I just found the weapons and gears with the engravings and made the use of it as I saw fit and as I had lvl enough to use) as I know there are builds for Hunter, for Assassin, for Warrior and all builds using abilities too that can be as OP or much more OP than my build (even because not only the use of abilities but also most certainly with much more health and armor/resistances too, as I am not focusing that and as I get 1shot by anything I dont really care about my hp, armor or resistances).
Can't even get better drop rates on Nightmare.
Try to opt for a 'crit build' (100% crit chance) and you're mowing down enemies left and right.
I'm guessing others have said it already but crit assasination attmepts (hold Y, wait for at least one bar of adrenaline to refill beforehand it consumes one) before fighting strong enemies can wipe out half or more health on the strong enemies in one shot, taking a lot of grind time off the strong enemies. Put some Crit mods and assassin damange mods on your equipment to buff it up a little. That one tactic can greatly reduce fight times on tougher enemies.
Also stay close to them if they are the mercs, staying close stops them from healing up. If you see them starting to quickly back off to heal run after them hah.
Are you talking about the legendary animals for the Daughters of Artemis quest line to kill legendary animals?
It is normal that those legendary animals have very high hp, and I have enjoyed the battles against these legendary animals.
• Sword of Axon
• Big Horn Bow (with your free 200 Helix)
• Prioritize getting Warrior DMG on armor substats
• 100% All DMG, 25% Health
• 30% Armor Penetration
• Get Epic Gear with Crit Rate/Crit DMG (or on Full Health)
• Max Warrior Passive
And just go to town.

Sounds like something wrong with your gear.
Go play "Kingdom Come Deliverance". After you've been jumped and murdered by a trio of scruffy leather clad drunks with billyclubs for the 6th time, come back and tell us how hard combat is in "Odyssey"......................
Just play the game. Get gear. Get abilities. Get gud. It's pretty damn easy and incredibly relaxing and stress-free.
