i dont know about liberation, that was a PlayStation Vita exclusive game released in 2012 which later got ported to pc and other platforms.
AC 3 was pretty good in my opinion and black flag is among the best pirate games i have ever played, for me its not only a good pirate game but also a good assassins creed game as well.
starting with origins they changed the design of this series almost completely when it comes to gameplay, origins, odyssey and valhalla play almost nothing like any of the previouse games of the series and do bring the series in a more RPG-ish direction which might be the reason for the positive reviews.
The controls were always a problem especially as you go backwards in the franchise. They were designed for consoles and poorly ported to PC. The control problem wasn't solved until Origins but everything has been good since then.
The games were buggy on release and it took months to really fix them but that's no reason to keep hating on them. I enjoyed all of them except AC3. If you haven't played them there's a goldmine of good gameplay there for very little money since they're pretty cheap now.
I'm a fan of the overall series but not happy with the direction it's going in. They said in Vahalla, stealth isn't needed anymore which being 'assassins creed' you'd think it'd still be applicable. i like the stories, just not content with the game play anymore.
also Ubisoft isn't selling their newer games on steam anymore so people are giving them negative reviews on all games.
It is also true that some fans are not satisfied with the work and will post negative reviews when they can. The problem is that they sometimes do actually find real details that show that the game needed more work than Ubi put in.
Put it this way, if assassin's creed games were that bad as some users say then nobody would buy them, clearly people love the games for it to be one of the most popular franchises in gaming history so far.

From the steam store page on each game, most of them have neutral reviews, syndicate has 77% positive which is nothing compared to 90% of black flag for example.
I just wanted to know if they games are really bad or if it was just backlash, as I can't find anything conclusive on youtube, and the steam reviews is mostly people complaining about how ubisoft ruins everything they touch.

i would bet most of the hate is coming from the fact Ubi are no longer selling the AC games on steam and this is how people cope by review boming them. The only ones that aren't great are AC3 and Unity, the rest are fantastic.
I have noticed that most review bombs and negatively happening are due to the fact games are being pulled off steam.
Things that happen outside the game shouldn't have any impact on a users review. Im glad valve took action to combat nonsense but it still goes on.
