On my Game+ playthrough (and every playthrough since) I decided to not only to go the full explorer route, turning off quest markers and most of my hud, but also forgo the use of any fast travel - instead, doing all travel by foot, horse, or boat. It takes longer to get places but I discover a lot of stuff I missed the first time through, get to see and explore the world more, and developed an even deeper appreciation for the setting.
When I play 'Valhalla' I'm going to go the explorer route right from the start, I think, so I build that deep appreciation for the world content on my first playthrough.
I went to one of those "Kill the Alpha Animal" spots and the Alpha was a rooster. His harem of chickens didn't like me killing him.
