Try disabling full screen optimization. Right click on
\Program Files (x86)\Ubisoft\Ubisoft Game Launcher\games\Assassin's Creed Odyssey ACOdyssey.exe. Select properties / compatibility and Disable full screen optimization.
Helped me eliminiate 1-2 second freezes that occured occassionally.

That made it even worse for me. Also tried changing to "run as administrator" but that didnt help either. I have a Gigabyte Laptop with following stats:
Prozessor 12th Gen Intel(R) Core(TM) i5-12500H 2.50 GHz
RAM 16,0 GB (15,7 GB usable)
GPU: Nvidia Geforce RTX 3060 Laptop GPU
Systemtype Windows 11 64-Bit-OS, x64-based Processor
