How do you knock enemies out?
I say an option for it in the controls, but whenever I press the button it doesn't do anything. Do I have to unlock it later in the game, or am I just missing something?

Come close, face target, stay stationary for a second, press E (on keybard). If the target isn't alerted and doesn't have high hitpoints left - you'll knock them out.

Knockout on controller is clicking on left stick. You can also knock enemies with knockout-arrows or using the sparta kick
