How does Ultimate Edition work?
I'm considering buying the Ultimate Edition mainly because it comes with III Remastered and Liberation Remastered but I noticed both of those games do not exist in Steam as per Ubisoft's request. Does it mean that those two games will be given to me through some Ubisoft launcher code?

What do you mean? AC3 Remastered does exist in the store, has its own forums and all that. Liberation in the other hand, doesn't. Since Liberation comes with AC3, that's the reason why it doesn't show up in the store. Don't worry, both games will get activated once you download and at least start Odyssey (that's the way the game verifies that you own the season pass and therefore, AC3 and Liberation remastered).

But when you buy any of those editions on Steam, are the remasters added to your Steam library (with the code to activate on Uplay), or to your Uplay library?

Both of them. I don't remember if on Uplay it separates Liberation from AC3, but on Steam it adds AC3 Remastered and when you open the game, a window pops up asking you if you want to launch AC3 or Liberation.

I bought the Ultimate edition at superb cheap price on Epic and I got AC3 Remaster as well.
Like steam, epic should be joined with uplay after that game can be downloaded and played on Uplay instead of Epic.
I have not downloaded the game so don't know about liberation.

Liberation is part of the AC III Remaster. When you start that you can choose between them.
