I'm almost certain than none of the "important" sidequest have expiration time. (note that the quest on the boards are totaly not scripted, and are non - story quest proceduraly generated over time, so i don't count them as "real" secondary quests ^^).
I have finished the game at 100% quests (quest speaking, i still miss some fort cleaning and things like this) and it seem i haven't miss nor see any disapear.
Thei're no spoil to say, i guess, that none of the sidequest involve death of npc involved in another quest, so no issue here :)
You can / probably should just take them when you want to do them for not breaking the flow of the quests, that are really nice for sidequest buy the way ^^
It looked exactly like any other quest, and I purposely left it for a later time. Shame.
It is harder in Odyssey to find which quests you missed even with list on internet, because there is no "Done" category which was in Origins (at least I did not find it).
For a totaly achiever objectif, if that can help, you can enable the full guided mode later on, it will show every mission on already explored island as long as you have used the sync points. (the one that guide you directly to objective, actualy also reveal all quest around the birdies, like in old assassins creed games ^^)
Then there's side quests that are shown like main quests, yellow outline around them. Some of them affect the story or other side quests and the timed ones go away when you progress through whatever quest they affect. An example is that I saw a quest for Barnabas but I thought I'd save it just to turn in my main story quest since it was closer, next thing I know it disappeared.
Afaik theres no way to tell if a quest will stay or disappear, so do what I should've done and do every side quest before the main story.
