Is this game worth it at 50% discount or should I wait for a better deal?
Other than that, does this game run fine (60 FPS) on my setup at 1440p?

i7 6700k @4Ghz
32gb DDR4 RAM
GTX 980 Ti

Odyssey is a very demanding game, i play on a RTX 2080 and can generally hold 60 FPS+ in 1440p with everything on "very high" but even i will see some drops below 60 FPS here and there, especially in the really big cities like Athens.

Here is a video of someone playing on high/very high with the 980Ti and the same CPU as yours in 1440p.
As you can see, performance is somewhere between 30 and 40 FPS most of the time.
And its the small starter island that is very forgiving performance wise.

Its a very big game, i am at 114 hours and still not finished, currently working on the DLC.
If you like very big open world RPGs with a ton of content then yes, its very worth it in my opinion.

What version of the game do you recommend buying at this point? I was between gold and ultimate.

Get the Ultimate, it's only $10 difference and the game is absolutely worth the money. I have well over 250 hours in the game and I rarely get tired of playing it. The characters and gameplay are a lot of fun and take it from me, you'll appreciate the world a lot more if you don't use quick travel - I'm not using it in my Game+ playthrough and it has allowed me to really take in the world on a much deeper level. Go ahead and hit all the quicktravel spots in case you ever really just want to skip the run, but I was surprised to find that I enjoy the game more when not using it.

GOLD. Ultimate is pointless just for some extra cosmetic items.
GOLD gives you the game and the season pass, all you need.

There's nothing wrong with them wanting to be smart with their money. Also, for the amount of endless, repetitive grind in this game, it's definitely not worth buying at full price.

Buy at price which is good for you and you get what you need!
I bought my on UPLAY PC-DIG-ASSASSIN'S CREED ODYSSEY GOLD for 49.99 EUR 25/03/2019. Now same game is 99.99EUR. Do the math and ask yourself why 50 EUR off and what can you do with that money. As a guidance: forget effect of FOMO ( Fear of missing out ) and don't rush and buy brand new single player games.

Ultimate is probably the best value for the game if you get it on sale since it includes the DLC and season pass. I've seen Ultimate on sale for under $40 several times from the Ubisoft store and Steam, which is more like 70% off.

Get the Gold version. Ultimate is not worth it.
