Even though title update three for The Division 2 comes out later on today, I think I'll start Odyssey this evening. Anyway...
A male only fake Eagle bearer makes sense. Historically, Sparta was the only Greek city-state that treated it's women equally. Girls were fed the same as boys, educated, trained athletes, and even some military training. They also couldn't get married until they were fully adult (20?).
They could own property, initiate divorce, etc. The Spartans believed that only strong women could birth strong men. Spartan women were notorious throughout ancient Greece. Read the works of some of the great philosophers and historians, and you'll find as much love, admiration, and respect, as fear and contempt.
Outside of Sparta, women were treated like trash. This is why Kass -a Spartan woman- as a warrior is believable. Outside of Sparta however... No. Well, there was Queen Artemisia roughly 50 years or so earlier, but the point stands that most who never saw the Eagle bearer(?), would probably dismiss the possibility of them being a woman.
Either that, or Ubi was just lazy. Judging from darkdisciple1313's mention of the quests brevity, and Miss Cakes' assessment of its quality, laziness is the more likely reason. When has the Assassin's Creed series ever cared about cultural/historical accuracy to THAT level?
Note: despite women being treated like a cattle in noble families in Athens, they were rather free to do whatever they want in Greece. To the point where a hetaira (Phryne) was so rich that she offered to finance re-building of whole city wall in Thebes after its destruction by Alexander's troops. Another hetaira - Tais of Athens - initiated destruction of Persepolis as an act of vengeance for destruction of Athens by Persian army ~50 years before the time when AC Odyssey takes place.
As for Notre Dame, a great -and fortunate- job on Ubi's part, but... Historically inaccurate.
At the time that Unity is set, Notre Dame was spireless. The original had been torn down, and construction of its replacement -which was seen in unity-wouldn't began until the 1850's. I know, splitting hairs. From what I've read, everything else about the cathedral was spot on.
Don't mind me, I'm still pissed about how they portrayed Robespierre.
I've read that too unlike today's time/other cultures try to control women and what they can/can't do. I've also read where the Danes (Vikings) had strong women fight along side them. Personally, who would suspect a woman could be a killer until it's too late?

Actually it was funny somehow how people dies at least, that was fun. I find that it was one of the few above the line (of course there were much better things but in general the most were much worse of this quest).
Oh btw... I, Kassandra, went to sleep with that old man ... ahhdhd and brought on my ship too ahahahah
