GOLD Edition gives you the main game + the season pass which includes all the DLC and the AC 3/Liberation remasters.
Unless you REALLY need some extra horse skin and a few other cosmetic items, the GOLD Edition includes all you need.

But the ultimate edition also gives you a horse skin, as well as the skins of the useless loot, which you can apply to non-useless loot.
In other words, the uselessness of the loot items is a moot point given the fact that you can apply their appearance to non-useless items, which therefore makes the useless loot items become useful to have, from an aesthetic perspective.
If you want the horse skin and thearmor skins that are included in the Deluxe Edition and Ultimate Edition, then buy the Ultimate Edition.
If you don't want that horse skin or those particular armor skins, then buy the Gold Edition.
