I always see this on the end-score screen, and it always seems to be zero - what is it for?

There should be an achievement for getting through the game without pausing. I know mine usually says like 200+

I pause regularly too - I guess it's a bug then that it was always zero in my games

Mine will take a long time to count my pauses... 300-400-500+

I always get 0 for that and I pause frequently. I thought it was for investigating a planet and a crew suggests partying under the stars, but I did that (i.e. agree to party instead of prospect for minerals) during my last run and I still failed to score any. Pausing the game is 'Time Stretched xxx Times".

EDIT: I take it back, it IS for how many times you paused the game! If you hover your mouse over the icon on the left (during score summary) you'll see a tool tip explaining what each score is for. "Time Stretched xxx Times" is for how many times you slowed down the game.
