I did, in fact, that's why I'm doing this post, because there is no 1080p resolution, the max is bigger so it gives me the black borders
https://support.microsoft.com/en-us/help/4027573/windows-10-open-registry-editor
Look here:
Computer\HKEY_LOCAL_MACHINE\SOFTWARE\WOW6432Node\LucasArts Entertainment Company LLC\Star Wars: Episode I Racer\v1.0
if so, you could try modifying the
Display Height : to hexadecimal 438, decimal 1080
Display Width: to 780, decimal 1920
If not running the game as administrator, the registry location may be:
HKEY_CURRENT_USER\Software\Classes\VirtualStore\MACHINE\SOFTWARE\Wow6432Node
More info:

Unfortunately it didn't fix the problem, it sets the resolution to minimun, even if in regedit it says it's 1080x1920, the game just ignores that, and of course, it crashes while loading.
Still, thanks for your support, I guess I'd just have to live with those black borders, after all it's not that bad when you get used to them
