If you have DLC's, the Ferrari 296 is the easiest to drive, especially with the standard setup.
It is also important to set the tyre temperature correctly, it should be between 26.5 and 27psi when the tyres are warm. This makes the cars less ‘spinny’.
Btw, to OP, drive the default safe setups as these are .. more safe ... and can also deliver and allow to be competitive among fast drivers online (fast enough to reach 2% off or near 2% off of the best possible times).
I would say to hold the analog stick forward and steer around the edges (so you steer just enough and if needed hold it there for as long as you need then return smoothly too) and to practice smooth release of brake then smooth return to throttle.
Automatic gearing is also not recommended as you need engine braking only possible with manual downshift also automatic upshift may put your car into higher gear when you would not want to (it is often way too soon and not only you may lose acceleration because of it as you may also lose grip in the middle of a turn or upshift right before the braking zone).
What car is better for each player depend on how that player drives.
Mustang: has ridiculous straight line speed and you will get away with it in some tracks like Spa or Monza.
Aston Martin: Will have to trail brake correctly to extract speed and it's horrible on race starts. Bonus: You will actually learn to drive

Mustang seems sort of similar it has longer gears so probably less shifting also first gear
can lead to some wheel spin, it has some under steer issues sometimes too.
Aston and Mustang are both really good competitive cars right now as well.
Ferrari 296 is also good but a DLC this is probably the most popular car in the game by far I think on LFM it has 3x as many race starts then any other car, and its because it drives really good like its glued to the road. It doesnt have the best acceleration or the best top speed
but it really handles the corners well and just feels great not as good on bumps and curbs
-I dont know if this one would work as good on controller it can be a little more reactive on steering input but it feels amazing on a wheel lol.
BMW M4 is a contender I find it harder to drive then the Mustang or Aston it seems more prone to losing the rear and has short gears that are kind of annoying now-it used to have very similar long gears like the Mustang but they changed it a couple years ago.
Def worth trying out on controller. I used this car for LFM PRO season 16 and it was not as nice as driving the Aston Martin in season 15- I had to really practice and work on the setup non stop in the BMW.
Mclaren 720 Evo I find this one to be a little harder to drive especially if you dont have optimum track conditions, the rear really wants to come around all the weight transfers to the front if you touch the grass or a slippery curb it can spin-lowering the rear can help.
Its a great car to drive still handles a lot of situations well
-this is the car I am driving for Season 17 LFM PRO and yea....I spun 3 times in the first race lol in wet/drying conditions once I only touched the white line and that was enough to spin me around in a instant full 360 all 3 times lol. It feels great in the dry though and I just have fun driving it so I decided to take it- Also massive BOP +kg on LFM on many tracks.
The Mercedes AMG Evo could be a good one to try on controller I have not driven it much in the past few years it was always very stable though and more of a under steering car-so it probably would be less prone to spinning also known for taking curbs with out a problem.
Lexus actually could be decent forgiving suspension and probably the highest top speed in the game by quite a bit I think- def good for tracks with longer straights and just overall not bad to drive.
Idk personally you should just try all of the cars lol maybe you will just like driving one more and it will be worth w/e problems it might come with, also try figuring out the setup
Simple things like adjusting the brake bias and lowering the rear or raising the rear height can make a big difference.
Also holy hell the cars sound unreal in this game and it feels like you are wielding a beast when driving in cockpit view with the HUD off (have to keep tapping F2 for this at the start of a drive. If anybody knows an easier way please let me know!)
And 1:56 is not bad as you are starting but you can shave a good 8s there, maybe more (yes with gamepad).
Try other tracks too.
