AC and ACC both set the wheel rotation automatically.
You only need to set full range on your wheel settings and then calbrate wheel in game.
If you set your wheel to say 360 in your wheel software then in game it will be too sensative.

Ppl!! the easiest setting of all games. You only need put in control panel the same setting than in game.
Control panel to 900º and game settings at 900º, the game does the rest

I have no idea why people suggest 900/900 with G25/G27/G29. It unplayable because of the huge ffb deadzone in the center. Yes, you get realistic 1:1 ratio with the wheel, but it feels like driving a toy car in the theme park.

1080, the game has soft lock per car anyways. Too bad console version of ACC lacks that, you have to manually set rotation degree in different cars on the console version.

I use 900° (the default config for it at ACC)

And it feels right, not like driving a toy car.

Steering wheel should not be like a F1 steering wheel or worst, like a kart steering wheel where just a little bit more of steering and you are sideways.

I also dont have "huge FFB deadzone in center" either, I would check Logitech G HUB or Logitech Gaming Software in that case.
