i never drove the ferrari evo though. if you drive the evo, fox, it maybe worth to search further for map settings.
Driving the Porsche a lot myself, i tend to run Map 4 for wet races and work Map 5 to 8 depending on the stage of race. But that's down to how the car feels for me.
Then again; it's best you try it out yourself. Maybe you feel safe enough with Map 1 on a full wet track.
I change engine map midrace (or by the end of a race) if I notice I calculated wrong the fuel use and see I will not make it to the end of the race.
For wet condition I just drive a different line, brake a bit earlier, try to avoid certain kerbs or use higher gear through certain turns, later full throttle, but map I use the same.
i would suggest what i do (im not an alien though). try the default aggressive and just tweak it to your style. i usualy tweaking the brake bias, TC, ABS and the rear wing.
but i am driving the AMR V8 GT3 & GT4 and the 911 cup almost all the time in all sessions and every circuit.
you need to search a little more for engine map per car per track if you dont trust the kunos default setups. i do :)

3 normal power&consumption aggressive throttle map
4 normal power&consumption linear throttle map
5 Qual power, high consumption, least progressive throttle map
6 Qual power, high consumption, progressive throttle map
7 Qual power, high consumption, aggressive throttle map
8 Qual power, high consumption, linear throttle map
9 Low power, low consumption, progressive throttle map
could be this neo, could be 6 on safe and 8 in aggressive. definitely not 1 though. for mount panorama. i think that in the 488 evo also the default setup for the mountain is map 2. can you confirm?
I always change to 1 (well . . I forget sometimes but I also have setups with tyres psi changed for different weather and temperature, time of the day, but sometimes I still select default safe and go and exactly because of that sometimes I forget to change engine map to 1 because I am used to loading the setups I have saved for different tyres psi).
Even considering the temps and track conditions are not always perfect per what I have for the tyres psi changes at my saved setups, most of the times it is select and go without changes or with very little changes.
Also as some of these setups I have saved are old and I already changed my driving skills and style, sometimes I have to change a lot the tyres psi too because different driving style and techniques used mean different tyres pressure too.
