Once you release, the game understands you fully released the brake, but notice the game dont "instantly" release brake, so you can do fast taps (faster or slower) to do the brake (and throttle) percentages.
If you keep full brake, you can not turn as the wheels will be locked, so you have to adapt to that.
About braking points, pay attention to the track, there is usually some reference cue for you to use.
Using the racing line may help you but will also create a dependency from the racing line.
Without racing line you can learn and drive anywhere, also driving while defending your position or trying to overtake, because you are not sticking to the racing line, you know your reference points for braking, turning and using throttle and you know how to adapt yourself on the track, also what you can do, what not and where.
For keyboard:
Start with full brake while fully release throttle
After you notice you reduced enough to start turning, start tapping brake fast and throttle slowly, then change to throttle fast and brake slowly, untill you fully release brake and go full throttle.
To each turn you will do it differently.
Some turns you just tap or do some fast taps to brake while just tapping fast throttle, some others you tap fast brake and slowly tap throttle, without going full brake.
Also consider you have to find a way to shift up and down on your own, without automatic gear, and lear now to use gears to your advantage, to help with braking or to avoid spinning while using more throttle, etc, then you adapt from there while trying to be faster.
