Setup is the Aggressive setup with 60mm ride heights on both ends.
You ran over a line of three very high bumbs. Yes. That will happen. Dont cut that corner that much. You are the kind of driver that required those be out there.
In real life that would ♥♥♥♥ up the car. Those are just as bad as sausage kerbs.
Don't run over the sausages unless the wheel is straight and even then you shouldn't run over them. In the real world they could damage your suspension if hit too hard and they will upset the car which is what happened to you. I don't know if this will be implemented in the damage model in the final release but that would be great and its nice to see real world physics in action in the sim.
You can cut the curbing but should avoid the sausages this will help you to be consistent and reliable. They are actually there to enforce track limits. Also note your exits are many times more important than your entry for that chicane. If you're too fast on entry you risk compromising the exit of the chicane and not having the best line for the following corners and short straight which is also an overtaking opportunity so don't worry about how fast other cars are approaching. What's missing from the videos however is your braking point and that could explain why the cars appear to be entering the turn faster. Perhaps you're too early on the brakes.
With the other laps you got lucky and kept the car straight or managed to regain traction on the right front (which would have been airborne) before the right wheel lock could throw you off. If you want to run over the sausages when hot lapping go right ahead. For an hour long race I wouldn't recommend it unless you're a gambling man, at some point you're just going to hit the curb wrong by a fraction and the rest is history and like I said, if they introduce suspension damage from striking curbs too hard or too often then you're screwed in a race.
Take your time and practice what works. You've seen jumping the sausages doesn't work but it can be great for qualifying runs.

You'll also suffer from aerodynamic instability as your car's ride height change drastically when driving through bumpy surface.
