Config text I wrote should work ( i hope :) ).
First, try to config control in game (All buttons that you need, wheel, and one of the pedals). There is advanced settings for axes where you can see bar (how you axis work), for pedal axis you need to know start and end points for break and throttle. Axis have value from -1 to 1. ( In my case Gas from -1 to 0, break from 0 to 1 ). Also in advanced setting you can invert control (It may be necessary after setting config file).
After game, open config file. Main control config is in:
"C:\Users\...\Documents\Assetto Corsa Competizione\Config\control.json"
And in game you can save other configs in folder:
"C:\Users\...\Documents\Assetto Corsa Competizione\Customs\Controls".
But now we need main config.
Find "raceCommandAxisList"
Delete unnesassary parts ( from { to } ) with strings: "axisCode": "Gas", "axisCode": "Brake"
Add:

1) axisIndex - your pedals axis ( Number you can see in game while you config control )
(In our case for gas and break number must be same)
2) axisCode - which pedal we want to setup (Gas or Break)
3) minRange, maxRange - values in axis responded to the pedal ( you can see bar in advanced settings in game )
Save config and in Windows go to file setting and check "Read only" (Just in case)
Launch game and try)
If some pedal is inverted go to setting and in advanced axis setting check "Invert"

I have a MadCatz MicroCon wheel using single brake/accel axis and been looking for a fix. Will try it and definitely let you know if it works when I try it tonight.
For the MadCatz I have to do a bit of tweaking. Here's what mine looks like in case anyone else out there still owns one of these steering wheels:

Brake and throttle have moments where both are being used simultaneously, for the reason of keeping the weight transfer controlled so grip is as optimal as possible during all times into, through and out of the turn for maximum effectiveness to lead to faster times.
Sure, anyone can drive without ever having brake and throttle being applied at the same time, but it is far from optimal at many situations

So not adviseable (and reason why as far as I know no car irl have brake and throttle on same "axis"/"input").
If still you want brake and throttle to be at the same axis and the solution OP presented work... A more "neutral driving" with coasting or "fast transition" will be required but it may unsettle the car or require you to go slower on many turns.
What i'm getting at here is this; i use and have always used the right analogue stick for the function of accelerate and brake, this goes back years and years, it's as second nature to me as invert up/down is which i have also always used. And here come Kunos who then arrogantly decide that even though they don't even play with these controls that everyone who does has to use the L2/R2 triggers for these functions instead of letting players bind what they want to use like they did with the original assetto corsa., as i said in my case the right analogue stick as a combo for throttle/brake just as you are asking for an older wheel
I have an older and working wheel, but due to constant updates to the operating system upgrading now to win 11 from 10 etc, or BIOS updates, i basically can never get it working anymore (g25)..
If it had not been for this overlook and bigoted arrogance in design choice; i would of dropped a positive review but in my view their decision to do this was both bigoted and arrogant. i really hope they revert with this design choice for Assetto Corsa Evo. Quite simply this is not their decision to make it's ours the players.
Still, Steam Bigpicture is your friend and you may be able to set throttle as forward and brake as backward (tho again not recommended but you do you), you may even set controller binding as kb&m and set it however you may want.
