Well, I guess thats a case of getting used to fake sounds :)
The sound in ACC is very accurate and modeled on the original cars. Its not fluffed up to sound more "roary", its just how the actual sound is. Also "annoying" sounds are not cut out, like traction control and abs - some games do that to "enhance" the player experience.
You can also watch some in-cockpit-action recorded behind the driver. You will hear the same noises.
They might not be "pleasant", but they are accurate.
You will not get a full roar engine sound in any GT3 car. A flat V6 sounds much different from a gas-guzzling US V8 out of a Mustang for example. So you will have to get used to the ACC sound, they will stay how they are.

So if that's normal I guess that's just how the game works. Some of the rattling sounds are unexpected to me, but apparently that's the gear shifter. For example from 1:00 in the video to 1:10.
Try listening to the real deal every once in a while.
