Obtaining next weapon
I was obtaining one weapon after the other at a steady pace in the item world while leveling my team from level 1 to 100, I have around 30 weapon for every weapon category but now I keep seeying a lot of the same weapons rather than finding new ones, as if the "weapon unlocking pace" slowed down.
Did you guys noticed the same thing?
The unlock of newer weapon follow a kind of exponential curve so that it will take increasingly more levels before I get to find the next new weapons?
Or is something else?

There is a bit of a curve. In general if you want to obtain new weapons by using the item world you have to delve into the strongest weapon to find the next one with any amount of certainty. The strongest weapons can ONLY be found this way.
Ever since the item world was introduced this became a bit of a standard for getting new and better gear.

this is the tier table, if you wanna know the order of weapons and items, so you know what kind of itemlevel you can expect in what items (atleast in lowlevel versions)

Just so you know...the strongest gear can ONLY be found by delving into a t39 version of that gear and it will appear on the item god 2 (at floor 100) and also note that whilst this method will give you a big chance at better gear....the base level of that gear might make progression tough (my weapons start at lvl 300 right now....meaning that a full delve would prolly have lvl 500 enemies by the time I reach item god 2)

this is incorrect. the basic r40 items can only be gotten this way, but the "random r40 mystery room" legendary is a bit better, and the netherworld research r40's are basicly the best weapons in the game due to their unique innocent (which can even be equipted in the second weapon slot for full effect).

(all of this while keeping in mind that weapon stats dont actually matter at all to get maxed stats in D5, but that's besides the point)

From what i know you can get unique innocents by killing item gods and although you can only have 1 active on the item you can get all of them

to my knowledge, the revenge booster unique innocent isnt obtainable from the normal "kill itemgod" list.

infact, you can only get the "funweapon" unique innocents by defeating item gods, but i may be off with this.

Enemies only level up if you level the weapon. Use the skip gates and they will stay 300.
My bad seems overclocker and revenge booster are unique uniques, but except for those you can get all
A decent way to get high tiers weapons is to go through netherworld researches on the temporary worlds (blue icon), they stay at roughly the same level.

If you go for it on high level worlds as the base as well it is apparently possible to even get rank 40 weapons, so if you have a team (or multiple) strong enough to do those researches without impeding your normal map completions it is not a bad way to get more items.
If you start early enough, you can definitely get very potent items in low level worlds (I think I got a few rank 15+ in worlds where enemy level is less than 10), which is a lot higher than what the shop has for sale.

By rank 40 / rank 15 weapons do you mean weapons already leveled to 40 / 15 ?
No, items in this game each have a semi-hidden "rank", with rank 1 and 2 being what you have access to at the very start and rank 40 being the most powerful equipments in the game (before any item world levelling or anything like that).

Semi-hidden because it doesn't tell you the rank of an item, but maps tell you what ranks can be accessible in the bonus list and netherworld research tells you the highest rank that you can get from a world.
Item world's starting enemy level on the first floor is also based on the item's rank.

Wait a second I am confused... when you talk to the monster with the list of all weapons/items unlocked so far, the list for every weapon type scroll down much further than 40 entry as shown in that list you linked, it scrolls down up to something like 200 entries for each weapon, and so I was expecting 200 weapons for each type.

Can you explain me why it scroll down that much then?!

Under the 3 rank 30, you will find each magichange weapons as well as "fun" (they all have their own unique innocent and at least a few are from quests, their icon is an exclamation mark) and DLC weapons.

I just found a google spreadsheet that I think has most entries (the first page only has the ranked ones, but individual pages have magichange, fun and DLC ones as well, there are a few blank entries here and there though):
