Anyway, Professionals increase critical damage by 1% per level, up to 100%, and it's very important for damage.

You will note that the very first point (in all caps) tells you to put a stack of 100 professionals on her weapon, and near the end it mensions the 100% crit chance curry.
As for what professional are, they are an innocent type that boosts the damage dealt by critical hits, which is coupled with 100 crit chance curry and various boosts like Christo's 100% accuracy, celestial hosts for power boost, evilities and so on.
This kind of setup if fairly common, the character used can differ, the overload or skill used can change, but this is a setup that aims to maximize the boosts in order to 1-shot the whole map (usually except the boss) on the second turn (because you are using your first turn to sacrifice 3 units to put your character in revenge mode).
That said, assuming you're following that video advices, and deployed the same characters with the right evilities, there are a lot of easy improvements you can do.
Try to get some "evil eye" evilities on deployed characters, it stacks till -50% stats (you can find it on "chimera" monsters)
Move Mao 2 or 3 panels close to Metallia, his evility stacks multiplicatively with other damage adjustments (note also that he doesn't increase the damage you take,it does that to enemies close to him, that's a translation mistake)
Increase the level of the "magic boost" buff on the professor.

How can I get this Professional Innocence?

Maybe this is a stupid question, but if I use the Evility "Evil Eye", will that also decrease the quality of the prisoners and thus the quality of the Extracts?
The quality should be the same, i've captured quite a bit of "stats capped" enemies on a 20 stars
LoC Trapezohedron, while lowering their stats with evilities.
If you're not sure, just check the stats before deploying the debuffers, then check them in the prison later.
Basically, find a rank 1 item, run to floor 10 and switch it to innocent route, put someone with mobility and range (archer or mage work well) in the Hunter Team squad and boost that squad with prisonners to its max level.
Go to the innocent shop (right next to the squad shop by default, I think you need to have subdued an innocent in an item to unlock it, not sure about that) and move any red icon Professionnal you have in the item you put in the innocent route.
Dive into the item once again and when innocents show up kill them with the character(s) in the Hunter squad (significantly bigger bonuses when subduing them like this).
After you have a few, you can put the innocent aid squad to level 7 (don't go higher for now because it's slower than with the hunter squad, also put someone in the squad), merge your professionnals in 2 different stacks of roughly equal level and put them in the innocent farm.
Every now and then, they will spawn a new professionnal that you can put on the item and subdue, and after a few rounds of subduing and fusing them to the innocents at the farm you will get a max stack (ideally multiple max stacks, stack size varies by innocent type but this one stops at 100).
The final step is to put one of those level 100 professional on your metalia's equipment so that she gains the benefits from it.
There are a lot of different innocents, and a lot that you really want at max level like this, so I assumed that you knew about them since you were in LoC already.
Nope; evil eye influences only enemies or allies (if you are against units with that evility) on the map. No permanent stat loss.
Now to get Professionals, it's just luck of having them show up on an item you get from bonus gauge/stealing/chests/etc. Keep an eye open for important innocents on any item you get.
After you get one, subdue it and breed with a single stat innocent.
The main points to remember are :
1. Maxed out Christo
2. Execute the overload on the first turn, because Asagis will defend if you let them get a turn
3. You can add a cleric for Spiritual Gain for additional INT. Even though professors have Medical Insertion for "double" buffs it is NOT actually the maximum you can get
