The best class that could do this is a generic class called the Sage.
She possess a unique skill called Land Decimator unlocked at Lv.150, which basically targets everything in the map (including your own ally so be careful there) and damage all of them at once. But, the downside to this skill is that it have a fixed accuracy of 50%, regardless of any other accuracy buff you have with you at the time.
Not to mention, the base power of the skill is extremely low (G rank, even at maximum power boost), so you have to make it up by amplifying her stats to be roughly about 5 to 10 times of the target she's meant to kill.
Otherwise Sage using Land Decimator with Twin Head from Twin Dragon is pretty standard.
Give them the Twin Heads evility, Izuna's overload, and something with Revenge Booster, and they will be great for clearing out large numbers of enemies. Single target damage will be reliant on whatever spells she has and/or whatever skills her weapon gives(if not using staff). They don't naturally learn Heal spells, so you need to give them some to abuse that RES.
If you want someone with absurd durability, your best choice is likely Sicily. She has natural 25 resist to the elements, 10 resist to all weapons, and her unique evility makes her take 75% less damage from elemental attacks. You can give her the Slime and Horseman unique evilities to take 50% less damage from non-elemental attacks, and 50% less from physical attacks.
Load her equipment with the innocents that resist various damage types and ailments, and Sicily will become difficult to damage. Problem is that all those evilities leaves little room for damage boosts, so Sicily won't deal a lot of damage. Some Carnage maps will have enemies with Star Break evility, which sets your Star resist to 0, so they will likely just blast her with Tera Star.
If you need someone who can take down a powerful boss *and* lots of lesser enemies, you might want to try Valvatorez. His unique Evility lets him steal 20% stats from enemies he kills on that stage, which can often have him overpowering any major enemy if he can manage to take down some lesser ones first.
If you give him the evility "Plunder Power" from a postgame character, Val will instead be stealing 25% stats from enemies, making his growth even more extreme. Downside is, Val needs to get some kills first to start this, and a stage boss might overpower its minions enough to make this growth minor at best.
Edit: Decided to list at least 1 flaw for each choice, because no character is truly perfect, everyone has some sort of issue that you need to work around.
the better setup is a revenge setup that lets you use izunas overload on every single stage imidiatly. it takes much longer to set up but once you're there you can go even faster trough the IW. not really needed unless you're plannong on maxing out a lot of items, especially when hardcapping them (or powering up vanity items) (which takes needlessly long)
With that setup you can pump out up to 8 attacks with your sage per turn, each with a 30% chance to instagib if your speed is higher. Then you don't even need to be 5-10 times higher level to do good damage with LD. IMO for early post-game this is preferrable to the Revenge Booster cycle strat because you don't have to level 5 people to the point of 1-shotting, just 1 with decent SPD.
