If you don't mind that, then sure, go ahead. Story is at least interesting and you get to know more about each character.
If you're more into the anime artstyle, I suggest the aforementioned Guilty Gear Strive and Granblue Fantasy Versus Rising.
If you eventually want to get into the genre more seriously and learn everything there is to learn, then that's where UNIB is at it's best with plenty of depth and nuance to it's mechanics with unique characters.
you can also consider yourself buying UNI2, a direct sequel, but there's no dedicated story mode "yet" - it's promised to be added somewhere in future (I assume after end of season pass 1)
For more games with Story Mode, I can recommend:
- BlazBlue series (Story mode here is very long and complex, but if you here for it, then you will have fun. It is also a Visual Novel-style, but do occasionally throw you some fighs with CPU opponent in various conditions). pre-BBCF games also have a lot of single-player content, that is worth checking out. It might take 50-100 hours to read anything that BlazBlue can offer to you, so watch out for BB Collection on sales (you might want to ignore PC port of BB Calamity Trigger tho, it's not best experience. Play it on XBox 360 or PS3 if possible, and use PC port only as last-resort).
also don't play BBTAG, story here is short and suck ass
- Guilty Gear Xrd Sign, Xrd Rev2 and Strive (they all share same pattern of Story Mode - animated-cutscenes with no fights, that take roughly 6 hours to watch for each of three games. You can get extra context on what's going on in games by playing arcade mode of characters, but it's not that necessarily).
- from what I know Granblue Fantasy Versus not only have good-long story, but also have good single player mods, so you might as well want to try this one out.
- as honorable mention, if you played Persona 3 and Persona 4 you might be very interested in fact that Persona 4 Arena Ultimax have a Story Mode too! And since P3-P4 relaying on VN-style dialogues to develop plot, it's kinda natual to see it here too.
- some of King of Fighter games (post-13 mostly) have a dedicated Story Mode sections rather than just throw you some lore in Arcade Mode.
- there's also Story Modes in MK, Streer Figher and Tekken games, but that's more or less obvious.
- some niche games like Phantom Breaker Omnia or Arcana Heart 3 also do have Story Mode, but you might not be that interested in that kind of stuff. Still worth mentioning.
- Skullgirls also have a dedicated Story Mode, but it's more like a bunch of "what if" scenarios from POV of different characters - they share same goal of obtaining or destroying Skullheart, so some of them conflict with each other, but if you hooked on these characters you might find yourself enjoying the show.
I hope whenever game you will end up picking, you will have a good time! And maybe play outside of Story Mode too
