Great for discussions and matchmaking
You don't need many, just something for discussions, maybe a help section, maybe something for people to throw some screenshots onto. You could also have a welcome section that you're first taken into with some information, like linking to the Steam discussions for people to post bugs, and whatnot.
I'd say we could use one for voice chat, but I totally would rather just have that get integrated in the game itself as a separate option from typing (but still use the same radio-like system!). If people used discord for voice chat, it would kind of spoil a bit of the fun. =P But, if that isn't in the plans, or maybe a ways off, it would be good to have something on discord, at least.
If you need someone to moderate a bit, I'd be happy to help (Here as well! Though, things aren't too bad here yet, haha).
As far as setting all of it up, I've never done it, but maybe there are others here who may be able to help out with that.
I don't believe there's any need for any fancy bot stuff, though. That stuff is annoying and pretty pointless, unless you're using it to gather data from the website to display it on Discord (Who's online, leaderboard stats, etc), if that's even possible.
Absolutely check it out. I was skeptical at first, but now I use it almost daily.
Great way to reach out to likeminded individuals.

We should try to keep things pretty civil and, at least, mostly clean. (I don't think we all need to be swearing like sailors, even if we are one!). =P
Let's just be sure to stay active over here in the Steam discussions, and keep our important stuff over here, as well (especially feature requests, technical support/bug reports, etc).
Also, before it happens, I reeaally don't think we need to flood the Discord with a bunch of memes and clutter like that. =P But, maybe if you guys want to share some of your own eSail screenshots or real sailing pictures, we could probably get cbaldwin256 to create a channel for those types of things. =)
