What I tend to do is this. Pull main into centre. The get the jib set first, let it well out. Then gradually steer so the wind comes across the stern. Wait until you see the boom move to the opposite side of the boat then you can safely let it out.

BTW I have a few years experience windsurfing in Hawaii, but that is the extent of my sailing knowledge. I understand the hinge action of the boom in terms of physically holding on the sail and how that makes the board go, to put it simply. It's the same on a boat right? I cant just let go of the boom or I would get no resistance. So on the boat the same applies right?
So you probably could actually just let the mainsheet go when you have the wind astern. The shrouds would keep the boom in place. (Probably not good practice though! - You could be putting a lot of pressure on your shrouds which they are not designed to take.)
So yes, best to keep some tension in the mainsheet and hold with the jammer - or you can put the mainsheet on the self-tailer.

So once I am here, it feels like its pretty easy to over sheet the jib and pull it right back over to the port side with the main. In order to trim from this point, should I first let the jib all the way out, then very gently sheet until I get max speed? Are the telltales reliable and do they work the same when configured this way?
