Every player can choose a different map (skin) before the match starts (so they don't see the same map unless they pick the same map) but they will only be able to pick the standard map and choose from the standard characters.
The maps have all the same layout, so there's no difference in gameplay (though some maps have different names for murder weapons and rooms to fit the theme) and they will still be able to see your DLC character. :)
If you want all the themes and characters for your own enjoyment, the bundle is worth it because it will save you money. And if you plan to get all the characters, it may still be cheaper in the long run as it will include all the future packs, as well.
But if you don't care for the themes, just don't buy them. You can still get individual characters or character packs if you really want a different player toon.
I'd recommend getting at least one theme pack so you can change the skin of the manor every now and then and have more suspects to choose from. Which one is really just a matter of preference.
I, myself, got the Classic theme (for the map skin and Mrs. White) and the Internationals pack (for another Mrs. White, so I have two to choose from for all the classic characters, and the five newer characters). And I'm in no real rush to get any of the other DLC. I have enough variation with what I have now.
On the bright side, the DLC doesn't impact gameplay at all. So if you don't get any of them, you still have the complete game. It's just like if you had gotten an actual board game with a set theme and pieces.
