The drawbacks is that your Poise is very low, which means that you will get staggered when hit or when blocking anything. You also have 2 slots for specials and much less health. Also if you run away too much, the projectiles of some enemies become nigh impossible to react to, and since your poise is low you can't really block those.
I did not like bringing the Gunslinger to bosses because they're designed to hit you and plain dodging becomes much more challenging than just trading blows. You may want to switch back to the originals or something with more room for error like the punk gauntlets.
