Generally, there are no monsters exclusive to difficulties and the monsters you most likely to encounter in the run are dependent on your strategy, so it's kinda hard to say that you should play X difficulty for that specific monsters. Since you have a lot of missing monsters, just play Light Rain.
You can manipulate boss level on Light Rain in a way you'd be likely to encounter any specific boss if you want them to, so no need to ever stray from that if you want to find somebody. Level ranges exist in collection and that helps with that, I would agree that having these conditions mentioned in the rose medal menu would be a good idea though. Overleveling is a thing you want to avoid while searching for monsters anyway, so Light Rain kinda helps with that too.
