I think what you can do is in your profiler you can set centering spring force down to 0 but it will not automatically go back to center. You will need to find settings that works best for you

So you can go to Options-Devices and first thing should be mouse and you can use X on your keyboard to switch devices. If G27 is connected and registered it should automatically switch to it and you can adjust settings from there
Well you need to adjust deadzone when you plug your wheel and open the game. If I am not wrong default deadzone dor steering is set o 14% and I change it to 0% and it works just fine
buy a thrustmaster, worth the money. logitech are cheap, plasticky and the feedback is jerky and noisy. spend the extra and you will thank yourself
