As for profitability, I chopped up a annoying tree on my field, made $4,000 on just it. Considering they were mostly 1 foot sections, I don't think it was bad. The American map doesn't have any good forestry areas on it by default, so haven't done any large scale forestry, yet.
As for the time and hassle of trying to manipulate fallen trees, personally for me it doesn't matter how profitable it would be, that is not a route I'm going to take to make money.
It all depends how good you are getting the tree lined up to cut max length logs directly into the trailer. Every log you have to manually move with the loader makes logging less profitable.
You can plant trees surprisingly densely in a plowed field, and after they've grown you'll have easily over $100k worth of timber sitting there in a nice dense clump ready to harvest.
in the 2017 version (idk about 2019) you dumped the logs into the water at the mill or there was a spot in the parking lot that you could use. I always just used the water
