i mean when it works it works great , but then there is the 90% where it's a total train wreck !

i have 211 mods installed. 2 maps , about 20-30 buildings and a lot of vehicles
Have you tried starting a new game with just season and straw mod and seeing how it goes? If it fixes the problem it's a mod conflict.
We're they stock maps? I'm not sure what the difference would be but it does work fine on Oakfield Farm 19
No , i have not played a stock map since the games release.
Oxygendavid's maps are really nice ,maybe give one a try and see if the straw harvest mod works. I'm sure if enough people have problems a fix will be released, I hope.

This could, and I want to put emphasise on 'could', be your problem. From what I've seen about these two maps they contain scripts that allow for extra thing to be done on them, such a pallet production for example, that may be not playing well with the straw harvest add-on.
Doing a very brief look around, it also seems that a lot of people having issues with the straw harvest add-on are also playing maps with built in scripts and extra fill types (crops and what have you). From what I'm gathering as well, its a issue the map makers have to fix; not Creative Mesh. One of the recent post for OxygenDavid was that he had changed Sandy Bay to accommodate the straw harvest add-on as the 'too many fill types' issue was causing problems using the add-on with that map.
However none of this may be the case. I'm simply speculating as to what the issue is most likely to be. And that's what I would put my money on.
Well I see it like this, testing takes time, an you now how the saying goes "Time is money". Do you catch my drift?
That's unfortunate ,cause when everything works it's a great addition to FS 19
