I don't think I can. Tractors and other tools in the game show status' when operating them, and I don't understand why horses are different. Thank you for the clarification about the menu, but I think I will continue looking for a solution to the problem.

By that same argument, why is there a magical menu that is capable of being opened and displaying an arbitrary percentage bar for the status of an animal. At some point the line between real life and game are blurred. I am confused why a simple hud item to make riding 16 horses a day easier is upsetting to some.
Thank you! I will look into this and see if this does what I need. I share some of Willow Rivers concerns about the mod not being complete, but I appreciate your help it trying to find a solution.

I haven't tried it yet, but the whole mod seem less intrusive than the full-blown vehicle inspector.
You can turn on/off all of its features individually if you only want the horse HUD. It seems pretty customizable. You simply edit the vehicleFruitHudSettings.xml file using anything like Notepad. It stores its XML file in:
My Documents\My Games\FarmingSimulator2019\modsSettings\VehicleFruitHud
