Wool production time
Just want to make sure this is correct... as I'm using mods, lots of 'em. So basically, I have 50 sheep that are at 100% productivity. Seems they produce about 5 wool every 15 mintues. Which basically calculates to 480 wool per day. Which means it's going to take just over 2 days to produce a single pallet. That seems like a pretty long time with that many sheep. Considering the pallet size is only 1000L. So far I'm only up to 25L.

Side note: Another oddity, I purchased chickens and they're productivity was at 100% before I purchased any sheep, and I've yet to get a single egg. :/
**Update: after over 5 hours, I got 1L of eggs. Hmm. Doesn't seem worth it.

I'm getting about a pallet a day from twenty-five sheep in a small pen on medium economy setting. It's worth about about 1k a day. It's a decent sideline considering it takes very little specialized equipment and I'm right next to the spinnery.

You have half the sheep I have and seem to be producing about twice as much wool. :/

150,000 for the sheep pasture and another 75,000 for the sheep. At roughly $1,000 per pallet, I'll need to sell ~225 pallets of wool to break even. Which normally wouldn't seem too bad, but at this rate it's going to take over a year of in-game time to do it. Don't even get me started on the eggs which I now have a whole 3L after about 6 hours. (51 chickens)

Answer to your problem is lots of mods, one of them may be interferring or adjusted the rates.

I have 30 sheep and they are producing at a decent rate for the small number.

Fill up the pen with max number and they will produce faster.

Most likely. However, most are vehicle mods. The strange thing is, while testing this mod, with a full load of 250 sheep, they produced 4 pallets of wool in one day with 100% productivity. So I figured that 50 sheep would produce almost 1 pallet in a day. But doesn't seem to be the case.

I should mention that I do a lot of tweaking, I tinker with a lot of the mods I use. I've removed the spillage from a couple animal pens, but I don't think the spillage would have any effect on the rate that they produce items.

Note: Looking through tons of XML, there's nothing there I can see that indicates production/fill rate for wool. So it's hard to tell if it's been changed somewhere. Also there is some hidden XML in the game that could be effected, but I cannot locate the actual file.

eg: dataS/character/sheepAnimalHusbandry.xml -- which my guess is that it's hidden in dataS.gar
