I've had 2 horses but they were not for riding. Taking care of them till they died. One adopted us by walking in our yard during a long drought. She was skin and bone. Even after feeding her up she was never well enough to ride and we got her a friend in the paddock but she was old and her joints were full of arthritus so poor girl couldn't be ridden either.
Sad story and I feel for you. The in game horses are not lame or hopefully skin and bones. I was making a point that people can be creative with riding their horses and not try to find ways to not have to take care of them.

Coincidentally, there happens to be a mod for this now. At 11 pm, an AI helper will ride all your horses to 100% for a nominal fee of $300 each per day.

Need a stable block too. Would rather have that and a massive paddock to have them in

This. That's a place to spread lots and lots of straw (or straw pellet, or sawdust...). Whose bright idea was to put straw bedding on a paddock?? Horses are the only reason I didn't uninstall FS19 already. But there are some problems: 1) No breeding, r'ly? We can breed chicken now, but why not horses? 2) No manure... *looking at giant heap behind the stable... what is that... hmm* 3) OATS! So a horse is supposed to eat equal amounts of hay and oats? Like hundreds of liters per day? Do you guys know what would happen to a horse overfed with high-energy food such as oats? Carbohydrate overload. Most likely result: laminitis. Call a vet. Maybe your grass-eater can be saved from painfull death... /o\ Modders, we need you.
