Do roosters have any use?

You would think that the roosters would be needed for something since theyre availabe for purchase, but I dont see a noticeable difference with egg production or anything... what are they used for?

I tested this some, I don't see any use for the roosters either. They don't add a multiplier to the reproduction rate, and in fact as I have said before, you don't even need a rooster for the hens to reproduce. I kinda expected this to change in FS19, but here we are.

The chickens aren't producing eggs at a constant rate, they might drop 5 crates of eggs and then an hour later only drop 1

Hens can produce eggs without roosters. Instead of paying for 100 hens you can pay for 1 hen and 1 rooster. They have a reproduction rate like pigs however 1:1 is over 1000 hours. Buy about 15 roosters and 25 hens the reproduction rate drops significantly. Again it's only to save money not time. Buy 100 hens then you'll have a faster time earning eggs
