If you are hosting a multiplayer game the save game it is stored locally on your machine the same way as singleplayer saves are. That also allows you to use the same save single player if you so wish.
I use my main single player save with a friend who sometimes joins me to help - I just go to multiplayer and choose that save and as long as he has the same mods (and versions of mods) as I use on the save he can join me.
Saving acts exactly the same.
I hope this makes sense I am aware I have not covered dedicated servers.
In 19, the multiplayer is much better in my opinion. You won't lose your progress if you sign off, but depending on how the multiplayer is being hosted you could affect others. If you're playing non-dedicated, IE hosting a session, then the progress won't be lost but if you get off it'll force the others off as well. If playing on a dedicated hosted server, your progress won't be lost either unless the server owner decides to change the server map or shut down the server.
However, keep in mind that in the vanilla game the money available to you is the same for everyone else that is in the same farm id. In FS19 there can be multiple farms for competitve farming, and depending on the farm you join on it you will have access to that farm's money until you leave that farm. Can log out whenever, you won't be considered as leaving the farm so effectively even if you're playing on a single farm server your progress won't be lost at all unless, as I stated, the server owner changes maps or shuts the server down completely (Restarts don't apply to this statement).
