It was a quick conversion to FS19 that leaves a few warning messages regarding old-style textures, but they are inconsequential and can be ignored.

The big log fork on wheel-loaders is used sideways but requires arranging logs in a big pile. You can somewhat use the silage folding shovels like a bulldozer to arrange them neatly.
Try using shorter log pieces until you find a rhythm.
The smaller log fork (the one you can attach to tractors with front loaders) is better for handling smaller log pieces. It's still wonky and the trick above helps a bit too.
The best fork I've found are the ones on the dedicated trailers like the Scorpion or the Stepa tends to be the best one. It worked better in 17 but it still tends to grip much better than the other forks.
Log forks in FS have long been a pain in the butt. I can't count the number of times I was ready to rage quit because I spent ages piling up wood to load on a trailer but then they constantly would fall here and there, forcing me to push them and manipulate them to get them lined back up again. Also you can pick up small pieces much better in 17 than in 19 so consider just carrying them individually to the trailer and throwing them on board.
Last bit: be sure to engage the straps on your trailer to secure logs already added. I've driven trailers with logs sticking out at all angles because I didn't want to waste more time trying to fix logs that rolled around and fell out. You can keep securing and unsecuring them with each batch to hold them in place properly (plus unsecuring them allows the logs to settle).
