2) No trees or pickling I'm afraid. You'll eventually learn a recipe to make a brewing keg, which you can use to make an assortment of beverages, but the recipes are very specific.
3) Day ends around 18:00ish, and all houses lock up at 21:00 (unless you have a certain perk). The game forces you back in bed at 5:00, and you apparently wake up the next day with full stamina (unless you were already exhausted). Not sure if the time you wake up is any later though.
4) Every character has three gifts that they can give you, which range from recipes and rare items to information about the story or locations of treasure or other goodies. After recieving the third gift, you've essentially maxed their friendship.
Befriending the villagers is my main advice; they open a lot of doors to the story and tons of recipes/workbench recipes. Even if you don't have their liked or loved gift at hand, just talk to them every day, or give them a Nightflower (no one hates those).
Other than that, just take your time and explore! There's tons of hidden stuff that's only a hammer swing away.
One thing I am missing is a nice chart in game of all the villagers :( Its hard to know who I have met and who I have not.
While night falls around 6pm there are events and other things that don't happen until after 9pm. My advice is to wander around town after 9pm at least once in a while, although you may discover a reason to do it nightly. You can use your bathtub to skip time if you've run out of things to do.
Edit: Also if you don't want to keep a lot of animals, I highly suggest buying a fishing pole as soon as possible and level it up.
