Garfield Kart - Furious racing
Unfortunately, Auto-Steering in a kart racing game is pretty unique to Mario Kart at the moment.
About all you can do is play on the lowest difficulty. Maybe go into the free races so you can set up single-person races and don't have to worry about the team mechanics.
If you're looking for a more child-friendly racing game I would suggest Nickelodeon Kart Racers 2. It's rough around the edges and it doesn't have any voice acting but it's a solid racing game with a difficulty curve that can go from casual to competitive relatively easily and it's full of recognizable Nickelodeon stars....and Jojo Siwa for some reason.
Beach Buggy Racing 2 is supposed to be pretty beginner friendly but I haven't gotten around to trying it yet.
Table Top Racing World Tour is pretty quirky and more on the casual side but it may still be too much.
If you don't mind sniffing around more bargain bin quality racing games then Garfield Kart 2, F1 Race Stars and Bears Can't Drift are pretty solid and easy to pick up games that simply fall a bit short when it comes to the overall quality. Definitely a "I'll get it when it's on sale" pick.
