as for the rings challenge, if you find them too hard you can always use technique type or whatever theyre called (the tails type characters), since they have a greater ring pull distance. this also makes it possible to collet more rings when jumping through "wheels" of rings. also don't forget that you can drift midair, so you can gain points from that too.
Rouge got me through most of the daredevil challenges with relative ease, it just requires a bit of memorization, and proper use of drift boosting.
Drift ahead of time before going into a goal post, get as close as possible to the goal post, and pick characters/mods with high handling and boost for daredevil.
Traffic attack is piss easy.
Eggpawn Assault is really just a matter of high speed, and making sure not to space out your rockets so you aren't going 'above' your time limit. You can also sink one rocket into the blue guys, which slows them down, which makes them easy to ram to finish off. You can easily drift infront of yellow ones to and if they hit you from behind they instantly explode and keep moving you forward.
And the targets is a matter of just drifting all the time, and then spamming rockets at every cluster of targets.
Daredevil took the most tries for me, it's the hardest for sure, but none of the challenges take more than 15 minutes...
Here's a tip for the target events: fire your missiles backwards.
