I'm actually not tracking anything personally. Looking at the project settings, I see that Unity does indeed have the Analytics module loaded, and I can't select the "Analytics Tracker" in the options so maybe it's used and I don't realize it, or it's a default behavior of this version, or it's something else entirely. Either way, I don't remember setting up any Unity Analytics, I only track stuff internally for achievements and other Steam requirements.
So unfortunately, I can't give you much in the way of specific details, and apparently, I can't even tell you why. I'm sorry if this is an issue, there's nothing I would track that I would hide. Frankly, if I did better tracking, I might have solved a few issues earlier.
welcome in the World of Unity. What you have found there is the Unity Analytics Configuration, which can be used for Bug Tracking Purposes etc. This is by Default enabled in Unity, even when the Developer has not setup anything.

If you want to Disable it, Load your Project and navigate to the "Services" Window, where you can find the Unity ADs Management and Cloud Build Options. There should be a Option called "Analytics" that you can turn off.
This should not have any negativ effect on any other Functionality and should not interfer with the User Save Data.
