Nothing wrong with playing on lower difficulties. What matters is that you can have fun with your group. -1 (Easy) difficulty exists in tabletop, and when I first started playing with my parents this is what we had to play. They graduated to +1 and eventually even +2.
Not sure why the achievement rate is so low. Surprising to me. Glad to hear that you, at least, have found the game as rewarding as I have!
Mid-late campaign would definitely be too easy below those for my taste. Especially if you start throwing permanent enhancements and the modified rules into the mix.
I don't like losing scenarios to the RNG; if I make smart plays throughout the scenario then I basically expect to win. I like when the RNG makes me alter my strategy but I don't want it to cost me games. So, I'm willing to play the highest difficulty where I don't lose games to the RNG but I'm not entirely sure where that line is.
