If you get involved in wars on opposite flanks and there is not at least one army on each, then something went wrong. Even a friendly AI will declare war on you if it does not see troops on its borders.
It is better to immediately sell settlements that you cannot defend to your neighbors or even to the enemy in exchange for peace (if you are not at all ready for war on this front). This will give you time to end the war on the other flank and transfer troops to steamroller through your old lands.
Very often, just one general of 4+ level with 6 swordsmen + the actual militia of the settlement is enough to fight off a full enemy army. Therefore, all my governors are gray/iron and every turn armies are recruited/disbanded to cover problem areas (but this is already in the middle/late game).
