It depends on your comp. If you're running 2/3 cavalry, then trebuchet's aren't going to be ideal as you'll be quite aggressive and they'll just die. 1-2 just for siege there.
Trebs you always want at least 1-2 so you can effectively siege or have instant attack (siege attacker).
The rank 4 retinue of crossbowmen are actually better. They perform the same in range and are cheaper. Affording 2 armies is always better than 1 that just costs more.
Dragons are good but this depends on your economy, As you're on Kong Rong, I would recommend large pushes with full force, then disbanding and centralizing for a bit so your trade doesn't suffer. So I'd run 4 of his rank 4 crossbowmen, 2 trebs. And then have as many armies as I can field, muster them, take my objectives, disband all but 1/ 2 after.
Also, the AI is helpless as per all TW games vs horse archers if you want to try that style.
If you're holding ground and just want a defensive army to be a pain in the arse, repeaters are actually quite good for siege defense, or 2 giant crossbows + 2 ranged units of your choice.
