For battle difficulty, crank it up max if you enjoy Total War challenges. It's near impossible to lose a battle on lower difficulties as there are so many different ways to cheese things. I like to do a battle test in custom the first time I pick up a new total war and see if I can be a 10 stack with just my characters and like 2 units. If I can, I crank it up until I can't, and in this game you can do that all the way up until Very Hard.
Personally i play Legendary/hard. I'd really enjoy playing hard/hard with ironman save, but legendary is the only thing stopping me from save scumming. (well until mods come out).
Hard combat give you the AI perks etc, such as them prefering to aim at your archer etc, Very hard seemed combat while fun and challenging removes that elite unit feeling that you get when you get a beasty unit, campaign settings will give AI's elite units to use more aswell.
Anyways, after a while you're probably going to want to increase the difficulty once you're more familiar with the game, give H/H or N/H a go, i'm assuming you're going to play more than one campaign, and a new difficulty provides a new experience.
How so?
