You could ascend your save and fight the bosses again and if you did miss one, the achievement should pop after.
That said, the NG+ bosses are pretty easy even with some practice and having Debla spam could make them even easier than NG.
i always equip the holy purge mea culpa heart to make sure i wont accidentally use any flasks. any immediate pre dieu usually are 1-2 rooms away from the boss area so i think im safe with that part.
i did do a fresh NG so that the bosses wont hurt as much; also did the "bad" ending because i think it's the fastest route and it already includes all the OG bosses that i needed to fight. do you think fighting perpetua counts? i used flasks when i fought her and lost to her. aside from that, i think i did everything properly so im lost as to why the achievement didn't go up.
currently playing on my original save now (NG+4) and just defeated the tres aguistias (very frustrating fight ugh) but i didnt equip the holy purge mea culpa heart this time just in case that was indeed the reason why the achievement got bugged. ;~;
That's best practice but you can still get the good ending as well.

They're a bit of a pain but I feel they're one of the harder bosses for this. Maybe it's me but the second half of the game is just easier...probably because you have better spells and perks and such.
Tres Angustias are definitely a pain to fight. Very brutal without using any flasks.
I emptied all my flasks prior to a fight just in case the game thinks that "having flasks" and "consuming flasks" is similar. That's what I did for every boss and the achievement worked for me, so if it doesn't pop up for you this time, you could try that. There's also tons of rosary beads that work while not having any flasks as well so I honestly felt like the game got a tad bit easier.
