Missable’s guide
It’s been a long time since I last played blasphemous and since 2 came and I still haven’t finished the game I think now’s a good time. I am also aware that there are a lot of missables in this game and I would like to not miss them. Can someone help me by listing all of the missables and the way to achieve them all?

I don't think any items/collectables are missable, but a bunch of achievements are. These are the ones I know of:

Obviously, spoilers.

The Brother <-- You can't get this one if you visit Perpetva's grave before you fight him
Witness of the Miracle <-- Missed if you didn't get The Brother
Requiem Aeternam <-- Obviously you'll miss this the moment you beat a boss after using a flask. You'll also miss this if you didn't get The Brother
The Sister <-- If you die fighting Perpetva, apparently you won't be able to fight her again until the next playthrough
Rebirth <-- If Cleofás dies, you miss out on this one
Crossing Souls <-- If you talk to Redento in the Patio of the SIlent Steps (after killing the monster in front of the Mother of Mothers), OR save Socorro and already collected the Cord of the True Burying, OR haven't moved Redento to the Patio of the Silent Steps before getting the bad ending of Cleofás' quest, you can no longer get this achievement
Mediterranean Diet <-- If you kill more bosses than you gave herbs to Tirso, you miss this one
Bronze Medal <-- Can't be faster than 3 hours if 3 hours have already passed
Dying Breath <-- If you don't ask Viridiana to help you in 3 of the 5 boss fights where she's available, you miss out on this achievement

Rebirth and Crossing Souls are mutually exclusive on any playthrough, but it's quite easy to miss both. In particular, Crossing Souls is incredibly easy to miss.

I Know that if you take to long the tree guy is encased in tree but if you do his quest he gives you an item

No part of tree guy's quest is missable though. If he turns into a tree before you talk to him, the Golden Thimble will be at his feet. You can still fill it with oil and give it to him, after which the Frozen Olive and Dried Flowers Bathed in Tears will show up next to him (after you leave the area and go back), and you can visit Engracia's tomb with the Linen of the Golden Thread.
I'm not entirely sure, but I think this won't even lock you out of 100% completion.
