1. I'm curious and so this is experimental, but does the rosary bead that shows enemy health (Calcified Eye off Erudition) work on final Escribar? I'm too lazy to try, and since you're there, well...
EDIT: Not as lazy as I thought. I can confirm... this does not work... :-(
2. The dialogue is Escribar's 'healthbar.' Lines get triggered as his health goes down.
3. Since you're True Guilt, try using a lot of Blood Projectile when E is using fire or lightning
4. When E uses the poison balls, you can destroy them with your sword. I think parrying works too.
5. You're also going to need to do a lot of jump slashy-slashy
6. When Crisanta appears, make sure you're ducking behind her until the giant laser
What happened to your flasks?
Like I said, I picked the penitence of true guilt option for NG+, which changes your bile flasks so they only replenish fervor instead of health. This is fine normally because I can actually use spells, but my spells are all gone in this boss fight so I'm pretty much ♥♥♥♥♥♥ in terms of health.
I'll give some of the other tips a try, hopefully I can complete this version of the game soon and preserve whatever little scraps of my sanity are left lol

Relax. I have been stuck with bosses for longer in Blasphemous, especally NG+ , where all enemies are harder.
About you question.
You cant use any magic on him and health is useless on him(been there just yesterday, same situation).
There is no other way than face him all over and over again, where you can not only read his patterns but your reactions and actions are almost instinctive.
When he is flying with those green balls around, get in there immediately, strafe attack those first balls and you can almost always destroy all four. Then attack him endlessly and make those upper finish attack moves.
Fire balls, get close to him and slowly move further away, most balls will be thrown outside the frame down under you.
Green balls, eight, almost same manuveur: strife into him but focus more on him than the balls, you attack him while most balls will be destroyed by you as he moves.
Laser attack is easy to recognize and go fast behind Crisanta.
Final form, go immediately to him and attack him with sword attacks and aim for upper finishing moves.
