It's been a while since I played HK, but I got Blas in the recent sale and it feels like the difference is that Blas dodge/parry system is chunkier due to that post-defense "lag". There's very little room for error, and learning which defense works for each attack and the timing required is the key (it's much more Souls-y in that respect than HK), also don't get greedy with your attack windows.
FWIW, Ten Piedad probably gave me the most challenge of all the baseline bosses too (that low sweep!) - it's the first real boss, you don't have much in the way of power-ups and you're still learning the mechanics. Stick at it, and you'll be laughing at how easy some of the later baseline bosses are compared to HK's finest. Best of luck.

overall just hit, run and dont get too greedy with the hits, good luck.
If you really know the patterns, it comes down even simpler: just attack and dodge, strife attack if unlocked is also good. I never ever blocked/parried him.
I just really like to block his slaps, feels really good lol.
Once you'll get used to him the angry tree guy is very easy.
Here are the thing you need to know:
1 SLIDE - its an incredible useful mechnic use it often in combat. It also gives you a frame of invulnerability that allows you do dash through most enemies to get behind them.
Its especially useful against Ten Piedad because you can get behind him for a free sword combo whenever he lifts his leg for the the stomp attack.
AIR IMPULSE- if you hold the downwards or the dash button while hitting an enemy you will doa small midair jump its extremely useful for staying airborne as long as possible which allows you to avoid lots of attacks
And dont forget equipping rosary beads that increase defense
I havent tried air impulse to avoid attacks, but parry and slide are enough to beat the ♥♥♥♥♥♥♥ tree.

Same here.
Killed the guy on my 3rd attempt. He's got 4 attacks, and they're very obvious:
Low Slap: Dodging away or blocking this is wasteful. Just stay at max swing distance so you can hit him, and jump straight up over his arm. You can easily avoid this attack while still being able to hit him.
Stomp + Vines: Dodge away from the stomp, then jump back toward him. The vines will miss you, and you can resume the attack almost immediately.
Vine Wave: Dodge away, then dodge back into him as soon as you can.
Vine Spit: Stupid attack, ignore it. Just keep hitting him.
He's only dangerous if you let him back you into a corner, because the timing to dodge past him is awkward--this was my mistake in the 2nd attempt. 1st attempt, of course, was just learning his moves.
When I fought him the 3rd time, he took 3 whole steps away from his starting position before he died. As long as you stay near him, he won't move. The only reason he got 3 steps was because his Vine Wave forced me far enough away from him that he took 1 step after it finished each time.
When the vines come they are too tall to jump over when cornered, so I die every time
