The input lag is killing it for me.
The only thing stopping me from fully enjoying this game is the absolutely atrocious input lag.
Up until now I've been playing it with a wireless bluetooth XBOX ONE X controller and initially I thought that was the problem, but even after I've plugged it in, the input lag didn't go away.
Are there any settings I can fiddle with to make it go away?

PC specs:
CPU: AMD Ryzen 1800x
GPU: AMD Radeon 5700XT
RAM: 16GB DDR4

Please help.

Are you talking input lag or deadzone lag? Because I use around 50% antideadzone in Steam Input for a DS4. Even games like Super Meat Boy are like this for my DS4 on Win 7. HUGE ♥♥♥♥♥♥♥ DEADZONES. I usually use antideadzone for every game with a DS4 though, at least on Steam.

I do not have a ton of input lag, which is usually due to other things in the chain of your hardware. Nothing major anyway.

Disable vsync.
And most importantly:
Use a keyboard :P

Yeah, vsync adds input lag, from anywhere between mild input lag to a lot of input lag, depending on implementation.

Does Vsync toggle in video settings work for you? I still have 60 fps and seemingly still have input lag. Is there any other way to disable vsync?

in my case I never got input lag with vsync on or off, it just makes the game a stuttery mess if i have the ingame vsync enabled. I have vsync set to on in my NCP for all games and gsync enabled and it works great.

You might not notice it, but it adds input lag to anything. Gsync and Freesync are better implementations that drastically reduce the input lag, to the point where it's barely noticeable, but it's still there, as little as it is.
Windows automatically has vsync for anything in windowed mode though.
